Easy Mixed Vegetable



One of the reasons I love winters is the availability of all my favourite vegetables, cauliflower, carrots, peas all fresh, they are yum!!! Today I am here with this easy mixed vegetable side dish. Everybody knows that vegetables are good for health and a mixed vegetable dish is the easiest way to get all the goodness of many vegetables in one recipe. This is one of the recipes I learned during my college days. Ingredients used in this recipe are easily available. Hope you like it!



                                                          Vegetables you need
 
250g  Cauliflower
2-3 medium-sized Carrots (cut lengthwise)
150g Beans (cut lengthwise)
100g Peas
2-3 Capsicums (cut lengthwise)
2 medium-sized Onions (chopped)
2 medium-sized Onions ( cut and layered)
5-6 medium-sized Tomatoes (pureed)
2 tbsp Ginger-Garlic paste
Fresh coriander leaves (for garnishing)
 
                                                           Spices you need
1tsp Cumin seeds
1inch Cinnamon stick
3-4 Green cardamom
1tsp Turmeric powder
1tbsp Coriander powder
1tsp Red chilli powder
1/2tsp Garam masala
Salt (to taste)
2-3 Black cardamom seeds (crushed)
 4tbsp Oil
 
                                                                          Method
1. Heat oil, add cumin seeds, cinnamon stick and green cardamom. Let them crackle.
2. Saute chopped onions, ginger-garlic paste, turmeric powder and coriander powder.
3. Add cauliflower, carrots, peas and beans. Cook till the vegetables soften.
4. Once the vegetables are cooked, add layered onions and capsicums ( don't cook them thoroughly)
5. Now add garam masala, red chilli powder and salt.
6. Lastly add tomato puree and crushed black cardamom seeds. Cook till the tomatoes are done.
7. Garnish with coriander leaves.
 
Enjoy with Naan or Roti!!!!!
